Perfectly Crispy & Cheesy Garlic Potato Wedges (No Frying!)

  • 2-3 Large Potatoes (approx. 600g)

  • 1 tbsp Salt (for soaking water)

  • 2 tbsp Olive Oil (or Vegetable Oil)

[Crispy Garlic Cheese Seasoning]

  • 4 tbsp Grated Parmesan Cheese (approx. 40g)

  • 2 tbsp Cornstarch (or Potato Starch)

  • 1 tsp Minced Garlic

  • 1/2 tbsp Dried Oregano (or Parsley/Basil)

  • 1 tsp Red Pepper Powder (Paprika or Gochugaru)

  • A pinch of Salt and Black Pepper

[Optional Dipping Sauce]

  • 2-3 slices Cheddar Cheese (or 40g shredded)

  • 3-4 tbsp Milk

  • 1 tsp Butter

  • 1 tsp Sriracha or Hot Sauce (for a spicy kick)


🍳 Instructions

  1. Prepare Potatoes: Peel the potatoes and cut them into wedges. (Cut in half lengthwise, then cut each half into 3-4 wedges).

  2. Soak (The Secret Step): Place the potato wedges in a bowl. Pour hot water over them until covered. Add 1 tbsp of salt and stir to dissolve. Let them soak for about 20 minutes.

    • Why? This removes excess starch and seasons the potatoes, making them crispier later.

  3. Dry: Drain the water and pat the potatoes completely dry with paper towels. Removing moisture is key to crispiness.

  4. Coat with Oil: Place the dried potatoes in a large ziplock bag or plastic bag. Add 2 tbsp of olive oil. Close the bag and shake well until every piece is coated with oil.

  5. Season: In a small bowl, mix the parmesan cheese, cornstarch, minced garlic, oregano, red pepper powder, salt, and pepper.

  6. Coat with Seasoning: Pour this seasoning mix into the bag with the oiled potatoes. Shake the bag vigorously again until the wedges are evenly coated with the cheesy powder.

  7. Bake: Line a baking sheet with parchment paper. Arrange the potatoes in a single layer (do not overlap). Bake in a preheated oven at 200°C (390°F) for about 25-30 minutes, or until golden brown and crispy.

  8. Make Sauce (Optional): While baking, combine milk, cheddar cheese, and butter in a small microwave-safe bowl. Microwave for 30 seconds to 1 minute, stirring until smooth. Add Sriracha if you like it spicy.

  9. Serve: Serve the hot, crispy potatoes with the cheese sauce. Enjoy!
